It can be so easy to make a fantastic, flavor-filled meal. All you have to do is appreciate the simple flavors of fruits and veggies!
Brown Rice with Cherry Tomatoes and Sautéed Tomatoes
Ingredients
-1 cup chicken broth
-1 cup brown rice
-3-5 cherry tomatoes
-2 tbsp olive oil
-a handful of mushrooms, cleaned and cut into slices
-2 tbsp Parmesan cheese
Directions
-Bring 1 cup chicken broth to a boil. Then add 1 cup brown rice. Cook as indicated. (note: use vegetable broth for vegetarian options)
-While rice is cooking, clean and cut cherry tomatoes and mushrooms. Sauté mushroooms over medium high heat in olive oil. Try to keep the mushrooms moving in the pan by moving the pan back and forth constantly.
-After brown rice is finished cooking, lay the bed of rice on a plate. Build dish with cherry tomatoes and mushrooms. Season with Parmesan cheese!

sounds delish, but question… I almost always make my rice with 2 parts liquid to 1 part rice… is the recipe meant to create al dente rice?

It depends on the rice you get. I buy Aldi’s Fit and Active “Instant” brown rice because I don’t like waiting 20 minutes for brown rice to cook, but still want the brown rice benefits. My box calls for 1 cup liquid and 1 cup rice to make 2 servings of rice.
